The experiments are the third and last boss from the Episode 1 The Foothills. They are horse like creatures, modified by cybernetics, and possibly possessed, highly guarded by the military in the underground base. Although unconfirmed, they might be the failed attemps at creating some super soldier-like creatures, since they are locked in some sort of cottage, which may imply, that they are not tamed properly and might attack other monsters beside player himself. The fight consists of fighting two of them, the only difference between them being the HP count. First Experiment has 6000HP, while the second one only 4000HP, possibly because the second one wasn't completely finished. Although you don't fight them at the same time by default, it is possible to release the second one, during the fight with the first, by pressing the button on the wall. They are both very agile, but they are usually not trying to ram the player. They rather run around the room for a while, and then start shooting a very fast salve of fireballs at the player. Luckily, they can be strafed to the side, so with fast reactions, it is pretty easy to manage this fight.
